Unsaturated oils are treated with hydrogen and a catalyst, and in the resulting reaction, the unsaturated portion of the combined fatty acids in the oil absorbs hydrogen across the double bonds between certain carbon atoms in the molecule. This reduction in the degree of unsaturation produces an oil with a higher melting point. Careful operation of the hydrogenation process will permit the operator to control and predict the melting point of the reaction product, so it is possible to produce, within fairly close limits, the exact product consistency that is desired.
